HOW TO MAKE NIGERIAN JOLLOF RICE| RICE COOKED IN TOMATO SAUCE| NIGERIAN RED STEW|APRIL LONDON RECIPE



Jollof Rice is basically rice cooked in tomato sauce. It’s usually served with some plantain, salad and your desired protein. I think the side salad really compliments the dish with its cooling effect to the heat from the scotch bonnet used. An advantage for someone like me haha!

450g basmati rice, rinsed
1 red bell pepper
1 red ramiro pepper
1 scotch bonnet
1 bulb of garlic
2 fresh tomatoes
1 can tomatoes
1 large red onion
2 tbsp tomato puree
1 tsp ground nutmeg
1 tbsp all purpose seasoning
2 knorr cubes crushed
70g fresh ginger
1 bunch fresh thyme
100ml vegetable oil
salt and black pepper to taste
